Curtido is a lightly fermented cabbage relish common in Salvadoran and other Central American cuisines. Our version is herbaceous, tangy, and vibrant — made with cabbage, carrot, onion, and jalapeño, brightened with lime juice and fresh lime zest. Traditionally served with pupusas, it’s also fabulous on enchiladas, burritos, bowls, BBQ, burgers, or fish tacos. Think of it as a lighter, livelier take on coleslaw with a whole lot more character.
